Chapter 51: Clients

Wintertime meant it was time to process hogs.

Steam cleaning a hog in the barn.

As I started to steam clean the bristles off, I could see tusk marks on the skin.

A propane torch would get any extra bristles I missed. I was disappointed to find so many bite marks on the ham areas and gouges on the neck.

Hundreds of pounds of soy-free pasture-raised pork from my farm to our table.
